Charlie Waffle’s Stuffed Anaheim Peppers

  • 6 Anaheim Peppers
  • 1lb ground meat – use pork or beef
  • 1-2 cans of Rotel tomatoes (I get the hot ones, but you can use the mild)
  • 2-3 cups of shredded Mexican cheese
  • 1/4c Jalapenos
  • sm white onion, diced
  • Garlic and pepper to taste

Cut off tops of peppers and cut down middle to make a boat. Rinse off peppers and get rid of seeds. USE GLOVES!!
Put peppers in baking dish in oven at 350 to start to get then soft.
In a skillet, brown/cook meat – drain any fat and return to pan.
Mix meat with tomatoes, cheese, onions, garlic, pepper and jalapenos, until all nice and gooey – add more cheese if needed.
Remove peppers from oven, remember to USE GLOVES, and fill each pepper with meat mixture.
Top peppers off with more cheese and return to oven. Cook until peppers become soft.
Serve with salsa, sour cream and/or guacamole.
Also, make a box of instant Mexican style rice.

Primo Quesadillas

  • 6 10" Flour tortillas
  • 1 jar Primo Zesty Mango
  • 1 6oz package goat cheese at room temp.
  • 1 tablespoon cinnamon
  • 2 tablespoon fresh cilantro, finely chopped
  • olive oil or nonstick cooking spray

In a bowl, combine goat cheese with Primo Zesty Mango. Lightly coat one side of tortillas with oil and place coated side down. On each tortilla, spread goat cheese/Mango mixture and some cilantro. Place another tortilla on top and press together, then brush top with additional oil.
Grill each quesadilla until cheese is melted & tortilla is slightly brown on each side, 3-4 minutes. Remove from grill and cut into wedges. Serve with mixed greens, salsa, guacamole and/or sour cream.

Kelly’s Mom’s Chocolate Oatmeal Cookies

  • 2 cups sugar
  • ½ cup cocoa (Hersy’s Baking)
  • ½ cup milk
  • 1 stick butter (1 cup)
  • dash of salt.

Mix all the above items together and cook over medium heat, bringing to a boil for just a couple of minutes (try and keep stirring)

  • ½ cup crunchy peanut butter
  • 1 teaspoon vanilla
  • 3 cups of Quick Quaker Oatmeal

Mix the above ingredients in with the others after it boils. Take a spoon and drop the mixture onto tin foil or wax paper. They will harden as they cool and become almost fudge like!

The “Ink” Margarita

  • 1 oz muchotte tequila
  • ½ oz fresh lime juice
  • splash of sprite
  • splash of OJ
  • Add 1 oz muchotte, fresh lime juice, OJ and Sprite to shaker with ice.
  • Pour over ice
  • Enjoy with all episodes of Food Ink
