Food Ink Episode 4

“Food Ink.” is a show intended to illustrate that cooking is not just for the professional chef, and that you can prepare gourmet-tasting meals in the comfort of your own home easily and quickly. The goal of the show is to present to the audience recipes that are easy to follow, simple to prepare, and delicious to enjoy as that is exactly what every home cook wants when they step into the kitchen. The question for many is however where to find that? That answer is almost as easy to find, as their recipes are to prepare. It’s “Food Ink.” Great food, without the attitude!

The man behind “Food Ink.” is a culinary master that has been hiding his cooking talents behind a microphone for the past 10 years. Howie Drummond, co-host on the ALICE 105.9 Morning Show is not only 1/3 of one of the highest rated morning radio programs in Denver, but he is also an accomplished chef with years of professional experience in the kitchen and behind the grill. Howie prides himself on his ingenuity in the kitchen, and has for years, maintained a passion for cooking delicious, easy to cook meals for friends and family.

Episode 4

Pittsburgh Hoagie

  • 8 slices sourdough bread, approximately ¾ inch thick
  • 8 ounces thinly sliced soppresatta (you can also use ham, pastrami, turkey
  • etc)
  • 2 russet potatoes, cut lengthwise and fried as French fries
  • 4 ounces gouda cheese, sliced (or Swiss or provolone)
  • 2 russet potatoes, cut lengthwise and fried as French fries Oil for frying French Fries Salt fries after frying to taste

Step 1
Heat about 1/4 oil in a pan. Cut potatoes (skin left on) into spears and fry until crisp (about 5-10 minutes) turning often. Drain on paper towels, salt and pepper and then set a side

Step 2
Make the SLAW

Pepper Slaw

  • ½ head green cabbage, shaved
  • 1 red pepper, sliced into thin strips
  • ¾ cup cider vinegar
  • ¼ cup sugar
  • ½ tablespoon ground black pepper
  • ½ tablespoon celery seed, lightly toasted
  • 1 tablespoon oil

Combine all ingredients. Let sit for a minimum of five minutes.

Step 3
Heat meats (4 total mounds of lunch meat) in skillet for about 1 minute turning Throw cheese over meat and let melt on top Get ready to take each meat/cheese mixture to be transferred to bread

Step 4
Assembly

  • Place one slice of sourdough bread on work surface.
  • Top that with ¼ of the heated lunch meat/melted cheese, Then ¼ of the pepper slaw Then add a few fries Press the sandwich down with moderate firmness.
  • Slice the sandwich in half, exposing the center of the sandwich, Repeat the process for the remaining sandwiches.
  • Repeat for all 4 sandwiches
  • Serve immediately

Banana Split Dessert

  • 2 cups crushed graham crackers
  • 2/3 cups melted butter
  • 2 softened Stick of butter
  • 2 eggs
  • 2 cups powdered sugar
  • 1 tsp Vanilla
  • 3 large bandannas sliced
  • 1 - 16oz can of crushed pineapple
  • 1 12-16 oz Cool Whip
  • 1/2 to 1 cup Chopped Walnuts
  • Marciano Cherries for decoration (enough to line across the top of cakes a few times)

Step 1 (Layer 1)
Mix the 2 cups of graham crackers with 2/3 cup melted butter then press the buttered graham crackers into the bottom of the baking pan

Step 2 (Layer 2)
Take the 2 eggs, 2 sticks softened butter 2 cups powdered sugar, and 1 tsp of vanilla. Mix in a bowl until smooth then spread mixture over your graham crackers

Step 3 (Layer 3)
Take the 3 large bananas slice them up and pour about a quarter of the juice from the crushed pineapple can over the bananas. Mix gently then pour bananas over layer #2

Step 4 (layer 4)
Pour the crushed pineapple over the bananas now and spread gently

Step 4 (Layer 5)
Spread all of the cool whip over the pineapple

Step 5 (Layer 5)
Sprinkle Chopped walnuts over top of cool whip then add the Marciano cherries in whatever design you want to top off the whole thing

Chill in refrigerator for 1 hour

Drink Recipes

P.A. Firehouse

  • 2 oz V5 Vodka
  • 3 oz Clamato
  • Worcestershire sauce – to taste
  • Tom’s Hot Sauce – to taste
  • ½ fresh lime/lemon (squeezed)
  • Salt & Pepper
  • Rim – glass with celery salt & trechas chili powder

Garnish – on a skewer

  • Cucumber spear
  • Red pepper
  • Blue cheese stuffed olive
  • Banana Peppers

Steele City Iced Tea

  • 1 oz Svedka Vodka
  • 1 oz Swig – Sweet Tea Liqueur
  • 1 oz Pallini Raspicello (Raspberry Liqueur)
  • Fresh lemon / lime – squeezed

Garnish

  • Lemon Wheel
